 COWBOY COFFEE CAKE
 
 Mix together in a large bowl:
 2 cups packed brown sugar
 2/3 cups butter, softened
 2 1/2 cups flour
 1/2 teaspoon salt
 1 teaspoon cinnamon
 1 teaspoon mace (or nutmeg)
 Reserve 1/2 cup of mixture to sprinkle. To remaining mixture add:
 2 teaspoons baking powder
 1/2 teaspoon baking soda
 Mix until distributed evenly.
 
 In a separate cup mix together :
 1 cup milk
 1 tablespoon of vinegar
 In a bowl whisk:
 2 eggs and then whisk in the milk/vinegar mix.
 Pour liquid mixture over dry mixture and stir to combine.
 Pour into prepared 15 x 8 x 2 inch glass baking pan.
 Sprinkle the reserved mixture to create a crumb surface on top.
 Bake at 375 degrees for 25 to 30 minutes.
